I thought I'd share a couple of tried and true peach recipes with you ...
"last chance" because peach season is nearing the end.
3 cups mashed peaches
3 tablespoons lemon juice
5 cups sugar
1 box powdered pectin -like Sure Jell
1 cup water
Mix peaches and sugar, lemon juice. Let stand 20 minutes, stirring occasionally.
Separately, combine pectin to water in pan. Boil 1 minute, stirring occasionally.
Add pectin to peaches . Stir about 2 minutes. Pour jam into freezer containers, leaving 1/2 inch head space for expansion. Cover and refrigerate until set. Store in refrigerator a few weeks or freeze 6 months to a year. Yields 8 half pints.
